Vegan Fruit Cake

This recipe was from an old recipe. Can't remember where from, but I have been making it for a few years, now. Very moist cake.  Best left at least a day before eating.  Ingredients 20oz mixed dried fruit 6oz dark muscovado sugar zest 2 oranges juice of half an orange 7oz plain flour 2 tsp baking powder 4 or 5 mashed ripe bananas 2tsp mixed spice Method Place fruit, juice, sugar spice and zest in a pan and boil for 5 minutes. Cool for 10 minutes.  Add bananas, flour and baking powder.  Pack mixture into a lined 2lb loaf tin.  Cook for about 40 minutes at 180c. Leave to cool. 

Nanny's Hevva Cake

Hevva Cake is a Cornish tradition.  Speak to ten different women and they each have a different family recipe for this.  This was my mum's recipe. I have changed the original fat content from lard to butter.  Any baking fat will do.  Ingredients 8oz S R Flour half tsp salt 1 and half oz butter 1oz sugar milk to mix 2 tblsp currants 1 egg Method Rub butter into flour till it resembles breadcrumbs. Stir in sugar, salt and currants. Beat the egg and add a couple of tablespoons of milk. Pour into the flour mixture a bit at a tim.e Add enought liquid till the dough forms a ball. Add a drop more milk if necessary. Spread out onto a lined baking tray till 1 inch thick. Sprinkle with sugar. Bake in oven at 200c fan for about 10 minutes. Leave to cool and cut into slices.  Nice spread with butter with a cup of tea!

Vegan Bolognese Sauce

These lentils, available at Morrison's, are the ones that I find work the best in this recipe. The black garlic was brought back from a trip to Spain. Found it in all supermarkets, but a bit pricey. Not seen any over in the UK, but I haven't really looked. Black garlic smells nearly identical to Chinese black beans, so they would be a good substitute. Another alternative is to use a couple of teaspoons of black bean paste. Apparently both these items have umami.  The best alternative to a mince bolognese I have made.  Love it.   Ingredients 1 tin lentils, rinsed and drained 4 mushrooms, optional 1 red onion, chopped 1 grated carrot 1 pointy red pepper, chopped 2 cloves garlic 2 cloves black garlic, or 6 six fermented black beans 2 tblsp Marsala or Madeira. Sherry will suffice! 12 cherry tomatoes, chopped half a carton passata chilli/pimenton/basil and any other herb or spice you fancy Method Fry mushrooms (if using), onion, pepper, carrot and spices/h

Lentil and Tomato Soup

Ingredients 125g (quarter bag) red split lentils 2 kallo organic veg stock cubes 1 large red onion, finely chopped 1 carton passata Method Place lentils, onion and stock cubes in a pan.  Cover with ample water (top up as necessary).  Cook until lentils are soft and the consistency is thick. Add passata and plenty of freshly ground black pepper. Heat through at this stage, but do not boil.  Add a bit of water if soup is too thick. Serve topped with grated cheese and doorstep bread and butter.

Basic Roasting Tin "Party Cake"

Ingredients 11b self raising flour 8oz sugar 8oz butter - melted 2eggs half pint milk 2 rounded tsp baking powder Method Line a roasting tin with parchment.  Heat oven to 170c fan. In a measuring jug, beat the eggs then mix in the milk. Put flour, sugar and baking powder in mixing bowl and mix together. Pour in the melted butter and egg mix and stir. Pour into roasting tin. Cook for about 45 minutes, or until a skewer comes out clean. Variations 1.  Add 2oz cocoa and chocolate chips  2. Dried fruit and mixed spice 3. sliced apples and spices 4. coconut 5. Orange and lemon zest Or try your own variation Top with butter icing, melted chocolate, cream, whatever you fancy! Brown sugar is a good replacement for caster sugar in chocolate or fruit cake

Focaccia

Ingredients 350g bread flour 150g plain flour 1 tsp/sachet active dried yeast 2 tsp salt flakes 1 rounded tblsp sugar 2 tblsp olive oil 300ml lukewarm water Method Mix dry ingredients. Add oil and water mix with dough hook on 1 or 2 for five minutes. Place dough ball in an oiled bowl, cover and leave to double in size somewhere warm for about 2 hours. Line 2 small baking trays with parchment and divide dough between them. poke finger holes all over the dough. Add topping of choice and cover. Leave to rise for 30 minutes.  Cook on Fan 170c for about 20 minutes. Topping suggestions salt and rosemary crumbled goats cheese and slow roast tomatoes.

Vegan Banana and Blueberry Bread

Ingredients 9oz plain flour 4oz brown sugar 3oz vegetable oil 125g blueberries 3 large or 4 small overripe bananas 3tsp cinnamon 3 heaped tsp baking powder Method Oven 200c/ fan 180c Line a 2lb loaf tin Mash bananas and stir in the oil and sugar. Add flour, cinnamon and baking powder.  Mix well. Add fruit. Pour into prepared loaf tin and cook for 20 minutes, then cover with foil.  Cook for a further 40 minutes.
